Very small inkfish, in France
suppions, in Italy calamaretti, in
Greece calamarakia, are a great
delicacy. They are usually dipped
in batter, fried crisp in oil, and
served with lemon.


CIVET OF INKFISH


3 lb inkfish, 3 lb onions, red wine, pine
nuts or almonds.
Clean the inkfish, keep the ink
and mix it with a glass of dry red
wine. Cut the inkfish small, and let
them soak overnight in red wine.
Next day cut the onions in slices
and melt them in a mixture of oil
