FILET DE BŒUF À L’AMIRAL


Slice 5 or 6 onions and fry them
in dripping; take them out of the
pan and add to them 4 or 5 fillets
of anchovies chopped, 2
tablespoons of chopped bacon,
pepper, thyme, marjoram, parsley,
and 2 yolks of eggs.


Cut a fillet of beef into slices, but
not right through, and between
each slice put some of the prepared
stuffing. Tie the fillet up, put it in a
covered pan with dripping, and
bake it slowly in the oven.
