risotto to the table. In any case a
risotto must be eaten immediately
it is ready, and cannot be kept
warm in the oven, steamed over a
pan of boiling water, or otherwise
kept waiting.


RISOTTO AUX FRUITS DE MER


For 4 people you need:
4 or 5 pints mussels, 1 pint prawns, ½
lb rice, a glass of white wine, 2 shallots
or small onions, a clove of garlic, grated
cheese, olive oil, black pepper, 2 or 3
tomatoes, and a green or red pimento.
