The ingredients for say 6 people
are 1½ lb of good quality medium-
sized white haricot beans (butter
beans will not do, they are too
floury), 1 lb of belly of pork, 1 lb
of breast of mutton, ¼ lb of fresh
rind of pork, or failing that of ham
or bacon, 1 lb of fresh, coarse
