HOT CUCUMBER SOUP


1 lb potatoes, 2 large onions, 2 whole
cucumbers, milk, parsley, chives, 1
pickled cucumber, leek tops, mint, salt,
and pepper.

Boil the potatoes and 1 onion in
water. When they are soft pass
through a sieve and proceed as for
potato soup, making a thin smooth
purée with the milk. Grate into this
soup 2 whole unpeeled cucumbers,
1 raw onion, add the pickled
