As light as a feather, our Yule cake is swirled with hazelnut cream andsmothered in chocolate. It will be the star of your Christmas table.PHOTOGRAPHERLOUISE LISTER STYLISTOLIVIA BLACKMORE PHOTOCHEFARUM SHIM##### HeavenlyspongeHAZELNUT YULE LOGPREP + COOK TIME1 HOUR 15 MINUTES(+ REFRIGERATION) SERVES 83eggs⅔ cup (150g) caster sugar½ cup (75g) plain flour¼ cup (60ml) irish cream liqueur2 teaspoons dutch cocoa powderfresh cherries with stems attached,to decorateDARK CHOCOLATE GANACHE½ cup (125ml) pouring cream200g dark eating chocolate,chopped coarselyHAZELNUT FILLING125g mascarpone cheese, softened125g cream cheese, softened1½ tablespoons dutch cocoa powder¼ cup (85g) chocolate hazelnutspread1½ tablespoons irish cream liqueur1 Make dark chocolate ganache.2 Preheat oven to180°C/160°Cfan. Grease a 25cm x 30cm swiss rollpan. Line base with baking paper,extending the paper 5cm above longsides of pan. Grease baking paper.3 Beat eggs and ½ cup of the sugarin a small bowl with an electric mixerfor 5 minutes or until mixture is thickand creamy. Transfer to a large bowl.Fold triple−sifted flour into the eggmixture. Spread mixture into pan.Level surface. Bake for 15 minutes.4 Place a large sheet of bakingpaper on a wire rack. Sprinkle paperwith remaining sugar. Turncake ontobaking paper, then remove liningpaper. Immediately rollup cake fromthe short side. Leave to cool.5 Meanwhile,make hazelnut filling.6 Unroll cooled cakeand brush withliqueur. Spread with filling, leaving a3cm border on one short side.
