MISO-ROASTED WHOLECAULIFLOWERPREP + COOK TIME 50 MINUTES SERVES 6``````1.3kg whole cauliflower1 cup (250ml) dry sherry¼ cup (65g) white miso paste¼ cup (60ml) pure maple syrup2 tablespoons olive oil1 tablespoon finely gratedfresh ginger2 cloves garlic, crushed2 teaspoons sesame seeds1 green onion, sliced thinly``````1 Preheat oven to 200°C/180°C fan.2 Cut a cross in base of cauliflowerwith a sharp knife. Place cauliflowerin a large, heavy−based cast ironcasserole or deep ovenproof dish.Pour sherry into base of dish.3 Combine miso, syrup, oil, gingerand garlic in a small bowl. Season.``````Spread over cauliflower. Coverdish with a lid or greased foil.Bake for 20 minutes.
