momentsMagicalCHRISTMAS PUDDINGSWITHBRANDY&GINGERPREP + COOK TIME6 HOURS (+ REFRIGERATION)MAKES 2 (SERVES 1 6)``````You’ll need tostart this recipea day ahead.``````350g dried raisins150g dried apricots, chopped350g sultanas150g dried figs, chopped100g glacé ginger, chopped⅔ cup (160ml) brandy6eggs1 cup (160g) coconut sugar2 medium apples (300g),grated coarsely1½ tablespoons finely gratedorange zest¼ cup (60ml) freshly squeezedorange juice250g ghee or butter, melted1½ cups (195g) gluten−freebreadcrumbs2 teaspoons mixed spicegluten−free custard, to servefresh raspberries, to servegluten−free icing sugar, to dust``````1 Combine dried fruit and brandyin a largebowl. Cover. Refrigerateovernight or longer, if time permits.2 Grease2 x1.5 litre(6−cup) puddingbasins or steamers. Line bases witha small round of baking paper. Placea 30cm x 40cm piece of baking paperon top of a piece of foil cut the samesize.Folda5cmpleatcrosswaysthrough centre. Repeat tomake two.3 Beat eggs and sugar in a smallbowl with an electric mixer until thickand pale. Stir in fruit mixture withapple, zest, juice, ghee, breadcrumbsand spice until combined.4 Spoon mixture evenly into basins.Top puddings with the pleatedbaking paper and foil (this allowspuddings to expand as they cook).Secure with kitchen string (or a lid).5 Place an inverted saucer in baseof two large saucepans.
