Fats are complex molecules composed of fatty acids. They are the
building blocks of all fats and oils in our foods and body. Time
invested in thinking about the following information can only
increase awareness of the functions of the body.


Fats are digested through the action of pancreatic
enzymes called lipases. Even after fats are broken down into
subunits, most remain insoluble in water and require further
absorption by using bile from the liver to emulsify them. Fats are
absorbed through the intestinal tract as glycerols and are
reconstituted while still in the intestinal wall as triglycerides. They
then enter the lymphatic system where these fats can be used by
all the body’s cells. It is simpler than it immediately sounds. Fats
are used as either a fuel, as a component of cell structures or as a
source of essential substances, which we will be learning more
about. They also provide an important layer of insulation
underneath the skin.


Fats provide 9 calories per gram, where carbohydrates
and proteins provide 4. But firstly, to dispel a myth: x calories
provided by fat does not mean that they will make you ‘fat’, even if
you consume four times the calories: fat does not (necessarily)
make you fat. Calories are the measure of the amount of energy of
heat needed to raise 1kg of water by 1 degree Centigrade. This is
not relative to the amount of weight gain. This is because our body
is more than water and more complex than just heating up water
to create energy. Mass media has not helped us to overcome our
ignorance of fats. Fats are important, fats are good! Most of these
‘lose fats fast’ diets are just fads – so beware.
