DINNER-FOR-BREAKFAST BURRITO


Here’s a super use for leftover chicken. Eat it with a cup of cottage cheese topped with a
handful of blueberries.

1 MEDIUM WHOLE WHEAT TORTILLA
1 COOKED CHICKEN BREAST, SLICED
¼ CUP SHREDDED REDUCED-FAT MONTEREY JACK CHEESE
¼ CUP JARRED SOUTHWESTERN BLACK BEAN AND CORN SALSA
Warm the tortilla in a nonstick skillet. Microwave the chicken on a plate for 30 seconds to warm it
and place on the tortilla. Top with the cheese and salsa. Roll up.
