FLAPJACKS WITH


CHOCOLATE CHIPS


(Number of Powerfoods: 4)


3/4 CUP WHOLE WHEAT FLOUR
1 TABLESPOON BAKING POWDER
1 TEASPOONSALT
1½ CUPS 2 PERCENT MILK
1 CUP PLAIN INSTANT OATMEAL
1 TABLESPOON BROWN SUGAR
1 TEASPOON VANILLA EXTRACT
2 EGGS, LIGHTLY BEATEN
½ CUP CHOCOLATE CHIPS

1. Mix the flour, baking powder, and salt in a small bowl. Mix the milk, oatmeal, sugar, and vanilla


in a large bowl. Stir in the eggs and then add the dry ingredients, a little at a time. Stir in the chocolate
chips.


2. Coat a griddle or nonstick skillet with cooking spray and heat over medium-high heat. Using a


measuring cup, pour about ¼ cup of batter onto the hot surface for each pancake. When the edges of
the pancakes are cooked and little bubbles form in the middle, flip the pancakes over. Cook until
golden brown.


Makes about 10 pancakes.
