EAT-THE-BOWL BEAN SALSA


(Number of Powerfoods: 2)


1 CAN (15 OUNCES) BLACK BEANS, RINSED AND DRAINED
2 MEDIUM TOMATOES, DICED
2 TABLESPOONS FROZEN ORANGE JUICE CONCENTRATE
½ CUP CHOPPED CILANTRO
SALT
2 LARGE RED BELL PEPPERS

1. Mix the beans, tomatoes, orange juice concentrate, and cilantro in a bowl. Season with salt.


Refrigerate for 30 minutes to allow the flavors to blend.


2. Slice the top off the peppers and scoop out the core and seeds. Fill with the bean mixture.


Makes a little more than 2 servings.


Per serving: 280 calories, 15 g protein, 49 g carbohydrates, 2.5 g fat (0 g saturated), 670 mg sodium,
