An unusual side dish can turn a mundane chicken breast into a gourmet-
quality meal. Pick up fennel at your grocer or farmers market. This
crunchy, sweet, aromatic vegetable with a mild licorice flavor is loaded
with vitamin C and other antioxidants. Here's how to cook it: Cut off the
core at the base of the bulb and remove the long stems. Quarter the bulb
and saute it with a teaspoon of olive oil in a pan over medium heat.
After 5 minutes, lower the heat and add ½ cup of orange juice. Cover
and simmer until the fennel is soft, about 10 minutes. (Hey, fennel is
also great grilled. Just brush with olive oil before tossing on a hot grill.)
