BRAZILIAN RICE AND BEANS

2 TABLESPOONS OLIVE OIL
1 CUP CHOPPED ONION
1 TABLESPOON MINCED GARLIC
1½ TEASPOONSGROUNDCUMIN
¼ TEASPOONSALT
¼ CUP CHOPPED BACON
3 CUPS CANNED BLACK BEANS OR RED KIDNEY BEANS, RINSED AND
DRAINED
1 CUP LOW-SODIUM CHICKEN BROTH
2 CUPS COOKED INSTANT BROWN RICE
Mix the oil, onion, garlic, cumin, salt, and bacon in a large saucepan. Cook over medium heat, stirring
occasionally, for 4 minutes or until the onion is softened. Stir in the beans to coat with the seasonings.
Add the broth. Reduce the heat to medium-low. Cover and cook for 15 minutes for the flavors to
blend. Serve over the rice.
