IT'S A LENTIL


Serve with crusty bread and a green salad.
(Number of Powerfoods: 3)


1 TABLESPOON OLIVE OIL
1 LARGE CARROT, CHOPPED
1 STALK CELERY, CHOPPED
½ ONION,FINELY CHOPPED
2 CLOVES GARLIC, MINCED
3 CUPS LOW-SODIUM VEGETABLE BROTH
1 CUP DRIED GREEN LENTILS, PICKED OVER AND RINSED
1 CAN (4 OUNCES) GREEN CHILES, DRAINED
SALT AND PEPPER
2 TABLESPOONS RED WINE VINEGAR

1. Heat the oil in a Dutch oven or soup pot over medium heat. Toss in the carrot, celery, onion, and


garlic and cook, stirring frequently, for 5 minutes. Add the broth, lentils, and chiles. Season with salt
and pepper.


2. Reduce the heat and simmer for 10 minutes. Stir in the vinegar and simmer for 2 minutes.


Makes 4 servings.
