3 LARGE TOMATOES
1 CUP PEELED CHOPPED CUCUMBER
½ CUP REDUCED-FAT PLAIN YOGURT
1 TEASPOON BALSAMIC VINEGAR
1 TEASPOON OLIVE OIL
1 TEASPOON LEMON JUICE
¼ TEASPOONSALT
Seed the tomatoes (cut a crosshatch in the bottom, hold over the sink and squeeze—most of the seeds
will come out of the bottom). Core and chop them into rough chunks and chuck them, along with
everything else, into the blender. Puree until smooth. Serve cold.
