4 OUNCES WHOLE WHEAT SPAGHETTI
1 TABLESPOON EXTRA-VIRGIN OLIVE OIL
½ CUP CHOPPED WALNUTS
1 CLOVE GARLIC, CRUSHED
2 CUPS TORN BABY SPINACH LEAVES
1 TEASPOON DRIED BASIL
SALT AND PEPPER
2 TABLESPOONS SHREDDED PART-SKIM MOZZARELLA CHEESE

1. Cook the spaghetti according to the package directions. Drain.


2. Heat the oil in a large nonstick skillet over medium-low heat. Add the walnuts and cook for 3 to 4


minutes, stirring frequently. Add the garlic, spinach, and basil. Cook for 3 to 5 minutes, stirring
frequently. Season with salt and pepper. Add the pasta and toss to coat; sprinkle with the cheese.


Makes 2 servings.
