2 TEASPOONS PEANUT OIL
¼ TEASPOON RED-PEPPER FLAKES
3 THIN-CUT BONELESS, SKINLESS CHICKEN BREASTS, CUT INTO BITE-SIZE
PIECES OR STRIPS
1/3 CUP FROZEN SNOW PEAS
1/3 CUP ASPARAGUS TIPS
1/3 CUP THINLY SLICED CARROT
¼ MEDIUM ONION, CUT INTO BITE-SIZE PIECES OR STRIPS
2 TABLESPOONS SLICED ALMONDS
2 TEASPOONS REDUCED-SODIUM SOY SAUCE
COOKED BROWN RICE
Heat the oil and pepper flakes in a large skillet over medium-high heat. Add the chicken and cook for
2 to 3 minutes, stirring frequently. Add the remaining ingredients, except rice, and cook for another 2
to 3 minutes, stirring often. Serve over the rice.
