GRILLED DESSERT KEBOBS
(Number of Powerfoods: 2)
2 TABLESPOONS HONEY
1 TABLESPOON BROWN SUGAR
1 TEASPOON LEMON JUICE
¼ TEASPOON GROUND CINNAMON
1 TEASPOON WATER
12 STRAWBERRIES
2 RIPE NECTARINES, EACH CUT INTO 6 WEDGES
12 1-INCH-THICK BANANA SLICES
2 RIPE PLUMS, EACH CUT INTO 6 WEDGES
2 1½-INCH-THICK SLICES OF ANGEL FOOD CAKE, EACH CUT INTO 6 CUBES
1 CUP PLAIN LOW-FAT YOGURT
1. Soak six 8-inch to 10-inch wooden skewers in water for 30 minutes. (Or use metal skewers.)
2. Mix the honey, brown sugar, lemon juice, cinnamon, and water in a small bowl.
3. Thread the fruit and cake cubes onto the skewers in alternating fashion. Brush the kebabs with the
honey-sugar mixture. Save any extra.
4. Spray cooking oil on a grill. Place the kebabs on the grate over medium-hot heat. Grill for about 5
minutes, turning twice, until the fruit is heated and the cake is slightly browned.
5. Combine the remaining honey mixture with the yogurt and drizzle over the kebabs.
