habits of 1,700 men and women and concluded that the best way to cut
calories out of your day was to dine with other people, instead of alone.
In other words, the more you focus on your food and the more you share
and enjoy it with others, the leaner you’ll become.
Isn’t it crazy, then, that traditional diet plans make healthy eating
seem like a punishment for some ill-defined crime? And that most diet
advice boils down to “eat bland food and count calories”? That’s exactly
wrong: Making food fun is what makes us lose weight. And that, my
friends, makes me your kitchen cruise director!
In this chapter, I’m going to show you how to have more fun
shopping for, cooking up, and gobbling down great food. And in the
process, I’m going to show you how to strip calories off your plate and
fat off your belly, just by educating your tastebuds and expanding your
kitchen skill set. Consider this: If you learn how to cook portobello
mushrooms a few ways and substitute them for beef just once a week,
you’ll save more than 20,000 calories and about 1,500 grams of fat in a
year. That’s the equivalent of 5 pounds of weight gone, say researchers
at Johns Hopkins Weight Management Center. Replacing low-energy-
density foods for high-energy-density ones, even occasionally, they say,
is one of the most painless ways to prevent obesity.
Learn more and you’ll burn more (calories that is, not the rice).
Meal making will go quicker, and you’ll have more fun doing it if you
can chop vegetables like an Iron Chef and can tell a tenderloin from a
rump roast. If you already know all this stuff, our apologies, chef. Jump
right into the recipes in the following chapters. But if the kitchen is still
terra incognita, consider me your tour guide.
