If you can put together an office desk from IKEA, you can cook a tasty,
nutritious meal for yourself and your family. It’s just a matter of
following directions, and (what luck!) the back half of this book is
loaded with them—simple recipes for good food.
Don’t fear the fire pit (or the microwave).
A baboon can grill a steak. Making great meals is more about
assembling the best ingredients in the right quantities than wielding
utensils like a hibachi chef. Learn a few tricks, however, and you’ll have
more fun even before you sit down to eat.
Master slow-cooking.
Owning a Crock-Pot is better than having a live-in chef. The meal cooks
while you’re at work, and you don’t have to worry about anyone raiding
your wine fridge. Slow-cooking is a nearly fail-proof way to make
flavorful low-fat meals without previous experience. If you can fill a pot
with meat and vegetables, you’re hired. A couple of things to know
before you go slow: You can’t go wrong with a 6-quart Crock-Pot. It’s
the perfect size for a family, and if it’s just you, well, you can always
freeze the leftovers. Tougher cuts of meat, like stew beef, are perfect for
the slow cooker. Cut them into chunks and toss into the bottom of the
pot before adding vegetables. They’ll be fork tender by dinnertime.
