Use a microwave to speed up this southwestern breakfast burrito.

2 EGGS
1 SCALLION, SLICED
1 MEDIUM WHOLE WHEAT TORTILLA
2 TABLESPOONS SHREDDED REDUCED-FAT MEXICAN-BLEND CHEESE
1 TABLESPOON CHOPPED CILANTRO
2 TABLESPOONS SALSA HOT SAUCE (OPTIONAL)
Whisk the eggs and scallion in a microwavable bowl. Microwave for 2 minutes or until set. Spoon
the eggs onto the tortilla; top with the shredded cheese, cilantro, salsa, and a squirt of hot sauce (if
using). Roll up the tortilla and slice in half.
