Allowances: 2 starches + 1 vegetable + ¾ fat

Bayou Baked Bourbon Beans


5 cups dried navy beans
1 large yellow onion, chopped
¾ cup molasses
2 teaspoons dry mustard or 2 tablespoons no - salt mustard
½ cup brown sugar (brown sugar substitute is available for
diabetics)
10 whole cloves
½ teaspoon freshly ground black pepper
1 tablespoon minced ginger root, optional
1 cup bourbon

Preheat the oven to 300 degrees F.
Wash and sort the beans in cold water. Place the chopped onion
in the bottom of a 1 - gallon pot. Pour the drained beans on top of
the onion. Combine the remaining ingredients in a bowl, except
for the bourbon. Pour the mixture over the beans and add enough
water to cover them. Bake the beans, covered, for 5 hours, stir-
ring hourly and adding water to keep the beans covered. Then
stir in the bourbon and bake the beans, uncovered, for 1 hour
more.
Yield: 14 servings (1 cup per serving)

I like to use ½ cup pitted prunes, ½ cup peaches, ¼ cup pears, and
¼ cup mangoes, but the choice of dried fruits is up to you.
