When the garlic head has roasted, remove it from the oven, let
it cool, then pop out the cloves. Add the garlic cloves, olive oil,
paprika, and water, 1 tablespoon at a time, to a blender or a food
processor and puree until the mixture reaches a smooth consis-
tency similar to mashed potatoes.
Yield: 4 servings ( ¾ cup per serving)
Each serving contains approximately: Calories 64 (4% from fat), Protein
3 g, Fat 2.5 g, Carbohydrate 5.9 g, Cholesterol 0 mg, Sodium 39 mg
Allowances: ½ fat + 1 ½ vegetables

½ cup cream of wheat, cooked
½ cup canned pears
2 teaspoons vanilla extract
2 teaspoons cinnamon, divided
½ cup oatmeal, raw
1 tablespoon honey
2 oranges, seeded and sectioned
1 cup pineapple, cubed
1 cup grapes
1 Red Delicious apple, cored and diced
1 cup strawberries, tops removed and sliced

Preheat the oven to 450 degrees. In a blender or a food proces-
sor, puree the cream of wheat, pears, 1 teaspoon vanilla extract,
and 1 teaspoon cinnamon and refrigerate, covered, for at least 30
minutes. Combine the oatmeal, honey, remaining teaspoon vanilla
extract, and remaining teaspoon cinnamon in a small baking pan
and toast in the oven for 12 to 14 minutes.
Plate the fresh fruit, pour on the puree, and sprinkle the toasted
oats on top.

Yield: 6 servings (approximately 1 cup fruit,^1 ⁄ 6 of the puree, and

(^1) ⁄ 6 of the toasted oats)
