Sweet Potato Burgers


4 medium sweet potatoes
1 small onion, diced
¼ cup diced green onions
3 cloves garlic, minced
2 tablespoons extra - virgin olive oil
1 cup oats, fi nely ground in a food processor
1 teaspoon ground cumin
1 teaspoon lemon juice
Parsley and cilantro (optional)

Preheat the oven to 400 degrees F. Bake the sweet potatoes for
45 minutes and let them cool. Reduce the oven temperature
to 350 degrees F. Peel the sweet potatoes and set them aside. In
a large pan, saut é the onions and garlic in olive oil over medium
heat. In a large bowl, mix the sweet potatoes, onion, garlic, and
all of the remaining ingredients except the parsley and cilantro.
Form the mixture into 6 patties. In a hot skillet, pan - sear the
burgers on both sides until they ’ re brown, approximately 3 min-
utes on each side. Place them on a baking sheet and bake them
for 10 minutes.
