One impetus to improve the quality of our diet and transform
our relationship with food is hearing from others who have taken
these steps and are now reaping the rewards we desire. One Ricer
recently returned with photos of his pantry, documenting his
“ before ” and “ after ” Rice Diet conversion experience. The photos
of his former pantry showed that his cupboards were chock - full of
processed foods; the after photos revealed a cupboard fi lled with a
variety of staples that facilitated his continued success. He made
a choice, and he acted on it.
Other Ricers have said that while at the program, they met
cooks who specialized in healthy cuisine; when they discovered
that these cooks lived near them, they later hired them to deliver
Rice Diet foods to their home. This inspired others to advertise at
their local health food stores for cooks to provide meals from Rice
Diet recipes. Although hiring a cook to make your meals may sound
extravagant, these Ricers actually discovered that they saved money
because they were not eating in restaurants as often, and they no
longer needed to pay for doctor visits or costly prescriptions. There
are other ways to ensure that your meals are healthy without spend-
ing too much time planning or cooking. For many years, while I was
single and primarily cooked for one to two people, I enjoyed very
inexpensive and healthy meals by always having a large fresh salad
and a bean and vegetable dish ready. Regardless of your family ’ s
size, it ’ s helpful to cook enough for three to four meals and also
to have ready - made, convenient leftovers handy — such as baked
potatoes and sweet potatoes, roasted winter squashes, and a variety
of vegetables.
Some Ricers, inspired by our organic farm tours, have returned
home and joined community - supported agriculture farms that
deliver organic foods that were picked fresh that morning. They
describe these food deliveries as the highlight of their week. Others
have enthusiastically related how they organized healthy dinner
clubs, as well as slow food fund - raiser dinners on local farms, which
became wholly engaging eating experiences. As you become more
