Method
Dough
In a medium sized mixing bowl, add
plain flour, sugar, baking powder,
instant yeast and mix to combine.
Make a well in the centre of the
dry mixtureAdd 150ml of water and 2 tbsp of
vegetable oil into the well of the
mixture. Stir from the centre to
combineUse your hands to mix and combine
ingredients until texture is dough-likePlace the dough on a floured, flat
surface and knead for 10 to 15 mins in
a warm areaOnce dough is plump and firm, place it
into a bowl, cover with cling wrap and
place it to the side to riseFilling
Preheat a pan on high and add 1 tbsp
of vegetable oil. Add diced onion,
minced garlic, ginger and stir to
combine. Cook through for 1-2 minsAdd diced pork and cook through
until tenderAdd diced spring onion, salt reduced
soy sauce, ketjap manis and stir
to combineAdd shredded carrot, zucchini and stir
to combine. Reduce the heat, allow to
simmer for 5 mins. Place it to the side
while prepping the doughOnce the dough has doubled in size,
flour a clean, flat surface and place
dough on topRoll dough out with a pin and fold in
half twice. Continue rolling out until
dough is smoothPick up one edge of the dough and
roll it into a log before cutting into
small piecesTake 1 piece, roll it out into a flat
circle and place a tbsp of pork mixture
into the centre of the doughTaking the outside of the dough, pleat
the ends until the dough is sealedRepeat this until the mixture is
finishedFinally, prepare steamer and place
Keke pua’a in for 12 mins to complete
