Method
Dough
In a medium sized mixing bowl, add
plain flour, sugar, baking powder,
instant yeast and mix to combine.
Make a well in the centre of the
dry mixture
Add 150ml of water and 2 tbsp of
vegetable oil into the well of the
mixture. Stir from the centre to
combine
Use your hands to mix and combine
ingredients until texture is dough-like
Place the dough on a floured, flat
surface and knead for 10 to 15 mins in
a warm area
Once dough is plump and firm, place it
into a bowl, cover with cling wrap and
place it to the side to rise
Filling
Preheat a pan on high and add 1 tbsp
of vegetable oil. Add diced onion,
minced garlic, ginger and stir to
combine. Cook through for 1-2 mins
Add diced pork and cook through
until tender
Add diced spring onion, salt reduced
soy sauce, ketjap manis and stir
to combine
Add shredded carrot, zucchini and stir
to combine. Reduce the heat, allow to
simmer for 5 mins. Place it to the side
while prepping the dough
Once the dough has doubled in size,
flour a clean, flat surface and place
dough on top
Roll dough out with a pin and fold in
half twice. Continue rolling out until
dough is smooth
Pick up one edge of the dough and
roll it into a log before cutting into
small pieces
Take 1 piece, roll it out into a flat
circle and place a tbsp of pork mixture
into the centre of the dough
Taking the outside of the dough, pleat
the ends until the dough is sealed
Repeat this until the mixture is
finished
Finally, prepare steamer and place
Keke pua’a in for 12 mins to complete
