Method
PASIFIKA PLATE
Mussel Fritter
Crack the egg into a bowl and whisk with a fork. Add
the lite milk, wholemeal flour, baking powder and mix to
combine
Place the mussels and spring onions into the batter
mixture and stir
Season with paprika and mix to incorporate the flavour
Prepare pan or electric frying pan and spray with
cooking oil
Take ¼ cup of the mixture and pour it into the pan.
Repeat this step to fill the pan and allow to cook on
each side for 2-4 mins
Repeat this step until all mixture is used
Once the fritters have been cooked through, place
them on a plate and garnish with spring onion to serve
Thousand Island Sauce
To create the Thousand Island Sauce, mix the salt and
sugar reduced tomato sauce and mayonnaise into a
small dish then mix to combine the flavours to complete

· 12 mussels (flesh finely
chopped)
· ½ cup spring onion
(chopped)
· Paprika to season
· Extra virgin olive oil spray
Thousand Island Sauce
· 2 tbsp lite mayonnaise
· 2 tbsp salt and sugar
reduced tomato sauce
