Preheat the oven to 180°C
Place the chopped pumpkin into a medium sized pot,
pour in water to cover pumpkin pieces and leave to
boil for 30 mins or until pumpkin is soft
Drain the water and place pumpkin into a bowl to
mash into a smooth consistency
Pour in coconut treacle, plain flour and mix to combine
Add lite coconut cream
To prepare the banana leaf, peel one side of the leaf
from the stem and place it in hot water for 2-3 mins
to soften
Place the banana leaf into a deep dish
Pour the pumpkin mixture into the banana leaf and
wrap the leaf to close, sealing it with skewers to hold
Place in the oven to cook for 20–30 mins or until firm
