Cut and prepare the bok choy, tomatoes and fish and
place to the side
Heat a pot on medium to high heat and drizzle extra
virgin olive oil into the pan
Add diced onion when the pan is hot and cook
until soft
Add the garlic, ginger and curry powder to the pot to
cook until fragrant
Pour in lite coconut cream and water and leave to
simmer for 10 mins
Add chopped fish, bok choy and diced tomatoes and
stir to combine
Place a lid on the pot. Reduce heat and simmer
for 5 mins
Finish and serve with a squeeze of lemon

bite sized pieces)

(roughly chopped)
· 1 brown onion (diced)
· 2 tbsp mince garlic

· 4 medium sweet potato
· ½ cup lite coconut cream
· 1 cup water
