Method
Repeat this step until all 3 eggs are
incorporated
Make a well in the centre of the
dry ingredients and add the
butter mixture
Using a spatula, fold the ingredients
together
Pour the burnt sugar in small amounts
and fold through gently
Once completed, line a cake pan with
baking paper and butter to prevent
sticking
Pour the mixture into the pan and
place it inside the steamer
Cover the pan with baking paper and
foil to prevent moisture dripping
onto pudding
Place the lid on steamer and allow to
steam for 1 hr and 45 mins.
Alternatively, you can prick the centre
of the Puligi with a skewer and if it
comes out clean it is cooked
Dry Mixture
Prepare a steamer and fill with the
required amount of water
In a bowl add plain flour, baking soda,
salt, nutmeg, cinnamon, ground cloves
and mix the dry ingredients to
combine well
Burnt Sugar
Prepare a pan on high heat, add 1 cup
of sugar to the frying pan and stir to
ensure it does not stick to the pan
Whilst stirring, carefully pour in cold
water and mix to combine
Allow to cool down for 15 mins
Add lite coconut milk
Stir the mixture until it forms a brown
colour and is well incorporated
Butter Mixture
In a separate bowl, add salt reduced
butter
Place in the microwave to melt for
40 secs and ensure it is not runny
but has kept its shape
Add 1 ½ cups of sugar and mix well to
incorporate the ingredients
Add 1 egg to the mixture at a time and
beat until it is well incorporated
