Method
Chicken Mixture
Prepare a large frying pan and turn
the heat to high
Drizzle the pan with extra virgin
olive oil
Add the chicken thighs and allow to
cook until golden brown
Add in mushrooms, red capsicum and
bacon and cook until mushrooms
are soft
Add in rosemary and fish sauce, black
pitted olives and reduce the heat to
low and simmer for 5 mins
Pasta
Fill a large sized pot with water,
season with salt and bring to a boil
Place the fettuccine into the water
and allow it to cook for 7 mins or
until soft
Chicken Mixture
Increase the heat to medium, add
garlic, chilli, Chinese cooking wine,
diced tomato and basil leaves into
the pan
Cook through for 5-8 mins
Drain the water from the pasta and
add the cooked pasta to the pan
Stir to combine all ingredients, top
with parmesan cheese, garnish with
basil and enjoy
