Popular in many Latin Americancountries, pastelon is a dish made of layers of ground beef and bananas.Serves 4Prep Time 15 minutesCooking Time 20 to 30 minutes2 to 3 tablespoons canola oil10 small saba bananas, slicedlengthwise into ¼-inch-thick pieces2 tablespoons olive oil1½ tablespoons chopped garlic2 tablespoons chopped white onions¦|³ cup chopped native red tomatoes1 bay leaf1½ teaspoons tomato paste400 grams ground beef2 teaspoons vinegar½ cup tomato sauce2 tablespoons chopped blackolives (optional)1 tablespoon chopped fresh oreganosalt and pepper1 tablespoon butter, softened2 medium eggs¼ cup milk½ cup cottage cheese¾ cup grated mozzarella cheesechopped parsley, to garnish``````1 Heat canola oil in a pan over mediumheat. Fry bananas until golden brown onboth sides. Drain on paper towels.``````2 Heat olive oil in another pan overmedium heat. Sauté garlic, onions,tomatoes, and bay leaf for 1 minute.Add tomato paste and sauté for 1 to2 minutes. Add ground beef and sautéuntil browned, about 5 to 6 minutes.3 Add vinegar and simmer for 1 to2 minutes. Add tomato sauce and blackolives. Simmer until beef is tender, about3 to 5 minutes. Add fresh oregano.Season to taste with salt and pepper.Set aside to cool completely.4 Preheat oven to 360ºF.5 Spread butter on a 7x11-inch bakingdish. Arrange bananas on the bottom,making one layer, then top with beefmixture, making another layer. Continuelayering with bananas and beef mixture,ending with beef.6 Whisk eggs and milk in a bowl; pourover beef and bananas. Top with cottagecheese and mozzarella. Bake until cheeseis melted, about 10 to 12 minutes.Transfer dish to the top rack of the ovenduring the last 1 to 2 minutes to brownthe top. Sprinkle with parsley. Serve hot.
