When MiguelVargas came up with the conceptin 2013, he banked on a recipe heremembered from his childhood: aneveryday brownie that looked like afudgy flourless chocolate cake. Hedubbed the bars Buckies, and thetreats became a fast pop-up marketfavorite. In 2015, Miguel opened asmall café that allowed him to takehis Buckies to the next level as waffle-style cakes with all the fixings. Nowin 2016, I am in his latest outlet in theburgeoning Poblacion area. This time,his expansion includes a savory menucrafted together with his childhoodfriend, chef Justin Golangco.It’s easy to trust a chef who eatswhatever he cooks. Think bonelessfried chicken thighs with cracklinggolden skin. (I forget about thegravy because I find the chickenflavorful and juicy enough, but thechef reminds me about it, which hesays ties everything together. He’sright, of course.) I wipe the plateclean—mashed potatoes, slaw, andall. The bread for their grilled cheesesandwich is made in-house, and itallows them to build a light and crispysammie that’s still sturdy enoughto hold the two-cheese filling. Thecheese is mostly mozzarella, in a ratiothat allows me to polish it all off withease; the chunky tomato soup on theside is the icing on the cake.Fried Chickenand MashedPotatoes``````OriginalParfait``````The menu at Bucky’s is tightlycurated (mostly coffee and desserts),but choosing something may feel likea difficult task. That’s the problemwhen everything appeals to everysensibility and craving. The difficultdecision-making ends with the bakedziti; it’s the one dish that I’d commita lifetime of carb allowance to. It hasa crusty cheese topping, just the rightamount of tomato sauce, and the idealportion of pasta. I think I’ll dreamabout it on nights when I don’t dreamabout their amazing soft-serve icecream. The ragout, for an extra P80, isa worthwhile investment.Sure, the menu is full of comfortfood favorites, the type that you canprobably make at home. It takes animpressive skill set, however, to makethis type of food matter enough tomake me leave home. And that’sexactly what Bucky’s has done.
