ther than flavor, there are three things to consider
when having a potluck party: variety, portion size, and
familiarity. First, make sure your spread has a good mix of
dishes that includes meat, poultry, seafood, and vegetables. Next,
remember that if you have a wide assortment of dishes, you won’t
need to provide full servings for guests, but do make sure you
have enough of each dish for each guest to sample. Finally, keep
your potluck spread timeless. Guests usually go for dishes with
comforting, familiar flavors—think Goldilocks’ Pork BBQ, Rellenong
