Cheesy Potato and Bacon Salad


Serves 6
Ingredients



  • 1 kg. potatoes, quartered and cut
    into 3/4-inch chunks

  • 3 pieces hard-boiled eggs cut into
    3/4-inch chunks

  • Coarse salt and ground pepper

  • 3/4 cup Sour cream

  • 1 (8-ounce) package Arla Cream Cheese

  • 2 tbsp. Arla Full Cream Milk

  • 1/4 tsp. cayenne pepper

  • 1/2 cup thinly sliced green onions, plus
    more for garnish (optional)

  • 4 slices bacon, cooked and crumbled,
    for garnish

  • 2 Tbsp. Arla Unsalted Butter, melted

  • 1/4 cup Arla Whipping Cream


Procedure


  1. In a large pot, cover potatoes with salted
    water. Bring to a boil; reduce heat. Simmer
    until potatoes are tender for about 12 to 15
    minutes. Drain well.

  2. Meanwhile, in a large bowl, whisk together
    sour cream, milk, whipping cream and cream
    cheese; add warm potatoes, and gently fold
    to combine. Season with salt and pepper.
    Cover.

  3. Refrigerate for at least 1 hour or up to 1 day.

  4. Season with salt and pepper, if needed; fold
    in green onions, eggs, melted butter and
    cayenne.

  5. Garnish with bacon and more scallions, if desired.
