6.7 Conclusion


The above-described procedures for the synthesis of regioisomerically pure mono-

and diglycerides provide ready access to these materials, and in good yields. By

using stoichiometric quantities of the starting materials, products of high chemical

and isomeric purity are obtained by a novel proprietary process, and without the need

of additional purification steps.
