NACHOS
In1943,agroupofAmericanmilitarywivesstationedinFortDuncan,Texas,
arrivedatarestaurantinnearbyPiedrasNegras,Mexico,afterservicehadclosed.
Themaîtred’rustledupsomecanapéswithwhatlittlehehad–friedtortilla
triangles, melted cheese and jalapeños. The maître d’ was called Ignacio ‘Nacho’
Anaya and he named his dish Nacho’sespecial. Nachos have come a long way since
theirinvention,andthey’retheperfectsharingdishforhungryguests.This
versionusesacheat’spulledporkrecipe–no12-hourcookingperiodrequired –
and a zingy storecupboard salsa to reflect the original spirit of the dish.
