Quickradish pickle
Thinlysliceabunchofradishes,
putinabowlandstirin3tbspeach
redwinevinegarandcastersugar.
Set aside for 10 minutes to infuse and
gentlypickle,thenstirinchopped
fresh dill and a pinch of crushed pink
peppercorns to serve.

Radishes with herby butter
Beat softened butter with
1crushedgarliccloveandalarge
handful of mixed chopped fresh mint,
parsley and dill. Season, then spoon
into a bowl. Chill, then serve with
a chilled bunch of breakfast radishes.

Heattheovento200°C/180°Cfan/
gas6. Roast a few bunches of radishes
inalargeroastingtraywithagenerous
glugofoil,aglugofdrysherryanda
coupleofknobsofbutter.Seasonand
roast for 25-30 minutes until tender.

Sliceabunchofradishes,thentossin
abowlwithfreshorangesegments,
rocket leaves and chopped spring
onion.Drizzlewithextra-virginolive
oilandthejuiceof1lemon.Servewith

Braised herby radishes
SERVES 4. HANDS-ON TIME 15 MIN
Heat50g butterin a large deep pan
over a medium-high heat, then add
350g mixed seasonal radishes,halved
or quartered depending on size. Turn
downtheheattomediumandcookfor
1minute.Add1crushedgarlicclove
and100mldrywhitewine.Turnupthe
heatandbubblefor5minutesuntil
most of the liquid has evaporated.
Season,thenstirinalarge handful of
mixed chopped fresh dill, parsley and
mint. Serve warm.
