Thai-style tuna and
broccoli salad

asquickly.Thinnertunasteaksmay
only need a minute on each side.
•200gsoba(buckwheat)noodles
- Toastedsesameoilfordrizzling
•2x200gthicktunasteaks(seetip) - 300g purple sprouting broccoli,
sliced into 3-4cm pieces - 1-2tbspsoysauce
- Bunch spring onions, finely
chopped - 2 carrots, peeled into ribbons
- 1ripeavocado,thinlysliced
- Bunch fresh coriander, roughly
chopped,plusextraleavestoserve - Bunchfreshmint,leaveschopped,
plus a few extra leaves to serve
FORTHE DRESSING
•4tbspfishsauce
- 2 tbsp palm sugar, plus extra to
taste - Thumb-size piece fresh ginger,
grated
•Juice3limes,pluswedgestoserve
•1redchilli,finelychopped - 4 tbsp toasted sesame oil
1 Whiskallthedressingingredients
inajug.Tasteandseasonwithsalt,
pepper and, if needed, more palm
sugar,then set aside.
2 Bringapanofwatertotheboil,
addthenoodlesandcookfor5
minutes. Drain, then run under cold
waterfor2-3minutesuntilcooland
silky.Putinamixingbowlandtoss
withafewdropsofsesame oil to
stop them sticking.
3 Heatagriddlepanorheavy-based
fryingpanoverahighheatuntil
smoking. Drizzle the tuna with oil
andseasonwithpepper.Searfor2
minutesoneachsideforrare(see
tip) or longer if you like. Remove and
setaside,coveredlooselywithfoil.
4 Add the broccoli to the griddle pan
andgriddle,turning,for2-3minutes
until starting to colour and soften a
little.Splashoverthesoysauce,
then griddle for another few minutes
untiltenderbutretainingalittlebite.
5 Addthespringonions,carrot
ribbonsandavocadotothenoodles,
then toss with the herbs, cooked
broccoli and dressing. Divide
among4servingplates(ora
large platter). Slice the seared
tuna, lay it over the salad and
sprinkle with herb leaves. Serve
with lime wedges for squeezing.
