F thereâs a dessert that
screams old-school British
it definitely has to be the spotted
dick. And no itâs not what
youâre thinking â the spotted
dick is a fruity steamed pudding
traditionally made with
citrus zest and currants
and served in thick slices
with hot custard.
à 250g self-raising flour
à Pinch of salt
à 125g shredded margarine
à 180g currants
à 80g caster sugar
à Finely-grated zest of 1 lemon
à Finely-grated zest of 1 small
orange
à 150ml milk plus 2 to 3 tbsp
à Custard to serve
- Place the flour and salt
in a bowl. Add the margarine
currants caster sugar
lemon zest and orange zest. - Pour in 150ml of milk and
mix to a moist dough adding
extra milk if required. - Shape the dough into a fat roll
about 20cm long and place it on
a rectangle of baking parchment.
Wrap the parchment loosely
around the dough to allow
for rising and tie off the ends. - Place a steamer over a large
pan of boiling water. Place the
parchment-wrapped pudding
in the steamer cover and steam
for one-and-a-half hours. - Remove the pudding from
the steamer and allow to cool
before you unwrap it. - Serve slices of the spotted dick
with custard to pour over.
