F there’s a dessert that
screams old-school British
it definitely has to be the spotted
dick. And no it’s not what
you’re thinking – the spotted
dick is a fruity steamed pudding
traditionally made with
citrus zest and currants
and served in thick slices
with hot custard.

Ù 250g self-raising flour
Ù Pinch of salt
Ù 125g shredded margarine
Ù 180g currants
Ù 80g caster sugar
Ù Finely-grated zest of 1 lemon
Ù Finely-grated zest of 1 small
orange
Ù 150ml milk plus 2 to 3 tbsp
Ù Custard to serve


  1. Place the flour and salt
    in a bowl. Add the margarine
    currants caster sugar
    lemon zest and orange zest.

  2. Pour in 150ml of milk and
    mix to a moist dough adding
    extra milk if required.

  3. Shape the dough into a fat roll
    about 20cm long and place it on
    a rectangle of baking parchment.
    Wrap the parchment loosely
    around the dough to allow
    for rising and tie off the ends.

  4. Place a steamer over a large
    pan of boiling water. Place the
    parchment-wrapped pudding
    in the steamer cover and steam
    for one-and-a-half hours.

  5. Remove the pudding from
    the steamer and allow to cool
    before you unwrap it.

  6. Serve slices of the spotted dick
    with custard to pour over.
