Dairy and gluten-free visitors aren’t forgotten about this holiday
season thanks to Foucade. This pastry shop that serves up only
gluten-free treats has created two Yule logs to make sure no-one
feels left out come dessert time. There is the Bûche Mandarine &
Pistache with tangy mandarin and italian pistachio while the Bûche
Cacao Cru & Noisettes Fumées is a chocoholic’s guilty dream made
with chocolate with a surprising infusion of smoked tea.

A spinning top is how the Shangri-La Hotel’s pastry chef
Michaël Bastocetti is bringing Noël to the dinner table
at La Bauhinia and with the charmingly childish idea
comes quite the sophisticated marriage of flavours. A
solid chocolate base is filled with a gingerbread biscuit
before layered with praline, chocolate mousse and an
airy praline cream with pieces of hazelnut, creating a
burst of textured flavour with every spoonful.

greatest pastry chefs in the world, and this year
is no exception with some so intricately designed
they look too good to eat. Here are our favourite

For the holiday season La Pâtisserie des Rêves has gone
choco and infused its signature dessert, the Paris-Brest
with a hint of bergamot orange. For Christmas each
choux has been filled with a velvety chocolate cream
that hides the house’s signature praline sauce that
has been mixed in with candied bergamot orange,
bursting in your mouth with smooth chocolate and a
citrus tang.
