Hijiki is a type of seaweed.
Some of its greatest
health benefits are
balancing hormonal
activity improving energy
levels and strengthening
bones. This salad isa
powerhouse of nutrition
and always delivers on
flavour.Tahini can be
expensive.You can easily
make your own by blending
125g sesame seeds with
2tbsp olive oil or sesame
oil. This homemade tahini
can be stored for up to one
month in the fridge.
Ingredients
(serves 3-4)
For the orangetahini dressing:
â240ml orange juice
â75g raw tahini
(sesame seed paste)
â120ml extra virgin ol ive oil
â4tbsp av ocado oil
â1tsp apple cider vinegar
â1tsp gluten-free tamari
âSea salt to taste
For the salad:
â4tbsp dried hijiki seaweed
â50gshii take mushrooms
sliced and stemsremoved
â1tbsp extra virgin ol ive oil
â1½tsp gluten-free tamari
â80g curly kale leaves chopped
â135g carrots grated
â½ cucumber peeled
and julienned
â2tbsp sesame seeds
to garnish (optional)

First make the dres sing:
combine all of the ingred ients
in a blender and blend for one
minute until creamy.

Rinse the hijiki cover with
water and soak for 20-30
minutes until tender. Drain
rinse and set aside.

Meanwhile in a mixing bowl
toss the shii take mushrooms
withth e olive oil and tamari.
Marinate for 15 minutes.

Add the kale carrots
cucumbers and sesame
seeds to the bowl of marinat ed
mushrooms along withth e
drained hijiki. Drizzle the salad
withth e dres sing and toss to
coat. Serve immediately.
