The wine, as is typical for many sauvignon blancs,
is refreshingly straightforward, with a good flavour
intensity, and proves to be more than a match
for Indian dishes. Its soft, medium body and ripe
yellow fruit character not only takes the edge off
the spices, but also manages not to dull the spices’
vibrancy, while still maintaining a crisp acidity. I
found the finish to be particularly enjoyable, as it
maintained a beautifully soft and lengthy spiced
note. Vibrancy and intensity, with an elegant finish
are the name of the game for this pairing.

bamboo powder paired with 2015 Santa
Rita “120” Sauvignon Blanc, Central
Valley, Chile
A bit rounder and fuller than the previous
sauvignon blanc, the Santa Rita “120” uses this
point in its favour with this pairing. I found that
the wine’s medium-plus body complements the
cheese well, while the present acidity helps to
keep the palate fresh and lively between bites. The
spice character in the wine also meld well with the
spices in the dish, though some may be a touch too
overwhelming for some. Generally, I found that this
was still a good pairing.
