First Love Pâtisserie, located in Raffles City, originated
from Indonesia. “I first tried their strawberry mille
crêpe when in Jakarta,” says Venessa Loy, 38. “It has
a tartness that balances with the cream.” Today, she
is getting the sakura whole cheesecake for a birthday
celebration, along with single slices of the original
and chocolate flavours. The texture of the crêpes here
are a little springy, with a bit of bite. You can taste the
flavours of the cream quite distinctly, whether it is the
cookies and cream, or the tiramisu. According to Stefan
He of First Love pâtisserie, the smoothness of the
cream is dependent on a few factors. “A high quality
dairy cream is key to the subtle flavour and soft texture.
Temperature, the right handling, and constant quality
control at each step of the production process are also
crucial.” For the crêpe, aside from using good-quality
flour, the technique and experience of the bakers also
come into play. The Japanese chef who developed the
recipe had also kept both children and the elderly in
mind, by using a reduced amount of sugar.
While the literal translation
from French for mille crêpe is
“thousand-layer cake”, in real life,
it is impossible to make a cake
with 1,000 layers. Our cakes have
between 15 to 20 layers, depending
on the cake’s flavour and the filling.
