Hidden away at the end of Sunset Way, Classic
Cakes has been around since 2006. “Compared to
the ones I’ve tried elsewhere, the crêpes here are
fresh,” says Bernice Lim, who is ordering a durian
mille crêpe cake for her parents-in-law, who are
flying down from Malaysia. “Charles [the owner]
won’t let me carry it to Kuching.” Apparently,
bringing it out under the hot sun would be
unthinkable. Freezing is also out of the question.
“I like the texture of the cake,” says Kaylie Ding. “It
doesn’t feel like a cake, but an actual fruit.” Her
companion, Sakthivelan Chandran, wasn’t a fan
of matcha before. “But after I taste the cake, I’m
starting to like the matcha taste.” Owner Charles
Quek, 59, was formerly in insurance sales, though
he had attended a Shatec diploma course, and
always had an interest in cooking and baking.
“I can’t let my customers bring the cakes overseas
because it’s cream,” says Quek. “By the time it gets
there, it won’t taste good.” The issue about freezing,
he explains, is that it would affect the crêpe. “Like
choux pastry, if you freeze it and then defrost it,
the texture is different.” If you wonder why his D24
durian mille crêpe cake is so popular, it is because
he cooks the durian pulp, which thickens it, and
fine-tunes its taste with a little sugar. “For me, I feel
that when it comes to baking cake, we have to put
in the effect.” While the appearance of the cakes
seems unfanciful, I am impressed by the taste. It
seems that not only in life, but occasionally, in food
as well, you need to see beyond the superficial, and
appreciate what truly matters. QL

be so thin, and consistent.
