ationwide there are colleges,
training centres and universities
providing catering and hospitality
courses right now. Locations are
spread over all geographical
locations to enable prospective candidates to join a
course, ranging basic cookery expanding to master’s
level courses.


However presently there are virtually little to no
courses focused around Asian Cuisine. There may
be the odd night class for budding cooks to join on
a one night week, but that’s about it! There could
be a number of reasons for this, lack of expertise,
not enough interest from participants, a lack of
government support, or little funding for equipment
and materials just to name a few.
There are many Asian successful chefs who have
been trained in hotel and management schools in
their countries of origin. They now have world famous
restaurants in the UK and are earning a rate that
is deserving of their reputation. Immigration is not
going to change quickly and we have to look how the
problem of staffing restaurants can be dealt with here
in the UK.


One of the options could be formal training in
colleges and universities similar to the training the
well-known Asian celebrity chefs have received in
their home country. With this option obviously there
is a time gap, and also the fact that the trainee will
be a student and therefore have a lower wage for a
couple of years!

We thought we would go straight to the top and
speak to Universities if they would support the Asian
Industry; training chefs for Asian restaurants with a
mix of practical ability and formal accreditation; it’s a
match made for success.

Speaking to universities we found that they hardly
need any encouragement. Many catering colleges
have, at some point, tried to put such courses in
place already, but sadly with little success. All the
universities we spoke to are all
willing to support the industry
and initiatives to train chefs and
cooks, many of them already
having established catering courses
utilising the ethic kitchen hardware,
and are readily available for use.

Will catering colleges across the UK, support the Asian


catering industry as a solution to the staffing crisis?
