When speaking to University of East London, we asked if they
have ever offered a professional catering course for ethnic
cuisines such as Indian, Thai or Chinese?


The university stated, “They knew other universities which
have run these specialized programmes, have struggled
to achieve their targets”. They explained the obstacles to
future opportunities to provide training courses, “The further
education system has been subject to huge cuts in funding and
provision is now dictated by commercial objectives in many
cases”.


Would Leeds City College support the Asian industry? Their
answer was, “Colleges can play a key part in supporting the
ethnic food industry. A lack of resources such as specialist
equipment and ingredients can be barriers.” They also stated
that “We would need support from awarding bodies to ensure
qualifications are relevant and up to date, we would require
training on the different aspects of ethnic cuisines along with
any specific equipment that is required, although we are lucky
enough to have state-of-the-art facilities here at Leeds City
College”


If any educational institution were likely to have an ethnic
course, surely it would be the University of Birmingham, right
near the heart of the ethnic community. Neil Rippington, Dean
of the College of Food, was asked if the college would support
the training staff. “This is a difficult task to crack but we would
be willing to help in whatever way we can.” He said. “We ran
out of ideas previously as we hit too many barriers and could
not generate sufficient interest.”


However the Dean feels there is still a lot of ground work to
do, stating, “There are many challenges. Many Indian, Chinese,
Thai families, as well as those from British backgrounds, do not
have aspirations for their children to gain employment in these
sectors. Many restaurant kitchens do not operate by speaking
English, which is another barrier. Businesses engaging with
colleges through training programmes or apprenticeships will
have to operate strictly according to legislation - employment
law, minimum wage, insurance, apprenticeship guidelines. This
could present a challenge for some. Persuading young people
that this is a great career choice is another challenge”.
