Working hands-on and small-scale is a necessity when
you’re brewing in a five-storey building in the 11th, Paris’s
most densely populated arrondissement. You can’t get a
lorry into these medieval streets but, fortunately, a large
part of BapBap’s output is consumed in the hipster
hangouts and craft-beer bars of the 11th. It’s a brewery
like no other: 1,800 square metres in an all-metal,
Eiffel-style building. Everything happens here except the
growing of the grain – malt crushing, brewing, fermenting
and bottling. Try its distinctive IPA, dry-hopped with Sorachi
Ace, an unfiltered ale, for a long-lasting, resinous bitterness.

Breweries within Paris city limits are rare; breweries with
waterfront views are almost nonexistent. But Paname
Brewing Company, Paris’s first micro-brewpub, has a
prime spot on the Bassin de la Villette, where Canal
St-Martin turns into Canal de l’Ourcq and continues its
flow north out of the city. Paname is a slangy nickname for
Paris from the early 20th century, when the bassin was a
thriving commercial transport hub. The brewery is in a
19th-century warehouse with industrial remnants and a
set of dazzling stainless steel tanks taking pride of place at
the back of the big, open taproom. The regular beers are
named for the canal’s Belle Époch heyday: Le Barge du
Canal, the big, hoppy IPA; Oeil de Biche, the crisp, fruity
pale ale. Monthly brews might include a Double IPA or an
Imperial red ale. Head for the spacious terrace that floats
on a pontoon out front, with a view of the canal-side
pétanque players and boat cruisers. The must-try beer
here is the Casque d’Or, the floral saison, brewed with
100% French hops, orange rind and candied ginger.
