The estate rears its own animals
Thyme’s lush fields are home to animals like rare
Cotswold sheep indigenous to the region, chickens,
geese, pigs and even honeybees. The creatures’ meat,
eggs and honey are harvested for use in the property’s
cooking school and award-winning pub restaurant called
The Swan.

It boasts a vegetable farm
Stroll through the verdant kitchen gardens brimming
with a myriad of veggies like rocket, lettuce, spinach,
plus fruits and herbs. There are foraging tours
conducted here too, before a cooking class.

It’s also a charming boutique hotel
There are 24 understated but luxurious rooms in
Thyme’s farmhouse, lodge and Courtyard, plus two
cottages, if you wish to stay a night or two to fully enjoy
the countryside. Prices start from £270 (S$485) a
room.

Thyme is at Southrop Manor Estate, Gloucestershire, GL7 3NX.
